Cooking: Keto Alfredo Sauce

I’ve always been a HUGE fan of pasta with alfredo sauce.  While pasta is long forgotten, unless of course it is a low carb version, alfredo sauce is something we can still go to town on!  I searched long and hard for a good keto version and none of the recipes I found quite fit the bill.  I decided to take a few recipes and combine them, alter them if you will to fit our tastes.  This is what we came up with!

Ingredients:

  • 1/4 Cup Unsalted Butter
  • 1 Cup Heavy Whipping Cream
  • 1 Tablespoon Crushed Garlic
  • 2 Ounces Cream Cheese
  • 1 Cup Shaved Parmesan
  • 1/8 Teaspoon Salt
  • 1/8 Teaspoon Ground Nutmeg
  • 1/8 Teaspoon White Pepper

These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.

Step 1:  Melt butter in a saucepan and add crushed garlic to the melted butter.  Cook garlic until lightly browned, but not burnt!

Step 2:  Add the heavy cream and cream cheese and cook until the cream cheese is melted and well combined.

 

 

Step 3:  Slowly add the shaved Parmesan (I have found that shaved Parmesan melts and combines best) until melted and well combined.

Step 4:  Finish with the suggested spices, salt, white pepper and nutmeg.

Step 5:  Cook until the sauce has thickened and serve immediately.

Step 6:  Enjoy!
