This recipe is a yummy one! I found a recipe similar to this one on Pinterest.com but, it called for regular coke, and I decided to spice it up and go with cherry coke. I also reduced the salt because I found the tablespoon it called for much to salty.
Ingredients:
- 1 Pork Shoulder Roast (or whatever size fits your needs)
- 1 Tablespoon Onion Powder
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Black Pepper
- 1/2 Tablespoon Salt
- 12 Ounces of Cherry Coke
These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.
Step 1: Combine the spices in a bowl
Step 2: Add the pork to the Slow Cooker
Step 3: Season all sides of the Pork, with the heaviest amount on the top of the roast
Step 4: Add the coke to the Slow Cooker being careful to pour around the roast not on it
Step 5: Set the Slow Cooker on low for 8-10 hours
Step 6: When done remove most of the liquid, reserving about 1/4 of a cup
Step 7: Shred the pork and add the reserved liquid to moisten the meat (omit adding the liquid back in if you would like to keep this lower carb)
Step 8: Serve with your favorite BBQ sauce (here is our favorite sugar free bbq sauce) and enjoy!
