Cooking: Fried Rice (Keto or Not)

It took me quite a bit of time to perfect my fried rice recipe but by golly, I have figured out the perfect combination!

Ingredients:

  • 2 Cups Cooked Rice/Miracle Rice/Cauliflower Rice
  • 1/2 Cup Diced Onion
  • 1/4 Cup Diced Green Onion
  • 1/4 Cup Diced Carrots
  • 1/4 Cup Soy Sauce
  • 4-5 Eggs (whisked)
  • Sesame Oil
  • Butter
  • White Pepper
  • Chicken Bullion

These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.

Step 1: Cook the rice per the instructions on the bag (typically a two to one ratio) the night before and refrigerate (if using miracle rice cook per instructions on product same day or if using cauliflower rice cook per instructions on product day before and refrigerate)

Step 2: Add oil and butter to the pan (typically I use a couple of tablespoons of each) and sauté your onion, green onion and carrots until soft, remove from pan

Step 3: Add more oil and butter to the pan and scramble your eggs, remove from pan while still slightly undercooked

Step 4: Add more oil and butter to the pan and add your rice letting it fry until it gets a bit of color

Step 5: Add back in your eggs and vegetables, then add the soy sauce

Step 6: Continue to cook until liquid is dissolved and add in white pepper and chicken bullion to taste

Step 7: Enjoy!
