I’ve been eating these since I was a kid, and honestly I love them! They are super easy to make and delicious as well. When we started doing keto I revised my mother’s recipe to fit my diet and even she says she likes them more than her own!
The best thing about this recipe is the versatility! You can change out components to fit your diet or what you have on hand.
Ingredients:
- 3 Six Ounce Cans of Canned Salmon
- 2 Eggs
- 1/4 Cup to 1/2 Cup of Almond Flour
- 2 Tablespoons Lemon Pepper Seasoning
- Lemon
These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.
Step 1: In a bowl combine drained salmon, eggs, almond flour (start with 1/4 cup) and about a tablespoon of lemon pepper seasoning. Add additional almond flour (up to an additional 1/4 cup) to achieve desired consistency (you want a patty that will stick together but is still moist, depending on the canned salmon you use and the size eggs you use will determine how much almond flour is necessary).
Step 2: Form five patties and top all patties with the additional 1 tablespoon of lemon pepper seasoning.
Step 3: Add oil to the pan and gently fry on both sides until cooked thoroughly (approximately 3-5 minutes per side on low).
Step 4: Serve with lemon and enjoy!
