Cooking: Crock-Pot Salsa Chicken

One of our favorite easy go-to meals, especially for a busy weeknight dinner is Crock-Pot Salsa Chicken.  It is so yummy and uses just 3 simple ingredients.  Of course you can and probably will want to embellish the final dish with a few extra ingredients, we do!

Ingredients:

  • 1 Large Chicken Breast (this is plenty for two people)
  • 16 ounces of Salsa (use your favorite brand or make your own but we love the fresh prepared salsa from Vons – it’s in the Produce Section)
  • 1 Packet of Taco Seasoning (use your favorite brand or make your own but we use Lawrys)

The measurements above are purely suggestions, you can use as much or as little as you like, but this combination is what we have found works best.

Step 1:  Mix the salsa and taco mix together in a bowl or other container.

Step 2:  Place about a quarter of the salsa mixture in the bottom of the Crock-Pot

Step 3:  Place the chicken breast on top of the salsa mixture

Step 4:  Place the rest of the salsa mixture on top of the chicken breast

Step 5:  Cook on high for 4 – 6 hours or on low for 8 – 10 hours

Step 6:  When the chicken has finished cooking, turn the Crock-Pot to warm and shred it with two forks.  Let the chicken soak in the remaining juice for about 5 minutes.

 

Step 7:  Serve however you like, some ideas are: topped with cheese, on nachos, in quesadillas, or as tacos.

Step 8:  Enjoy!
