Cooking: Low Carb Biscuits

I follow a few fellow “Ketoers” on Instagram and one of my favorites is @ketolchfmonkey.  She posted a recipe for these super delicious low carb biscuits that I just had to try, because let’s be honest who doesn’t love biscuits?  I highly suggest you try them, I cannot taste a difference between a regular biscuit and this low carb version.  These are super moist, extra filling and even taste way better than traditional biscuits in my honest opinion.

Ingredients:

  • 2 Cups of Carbquick
  • 1/2 Cup of Butter (1/4 Cup Softened & 1/4 Cup Melted)
  • 1/2 Cup Sour Cream
  • 1/4 Cup Diet 7-Up
  • 1/4 Cup Heavy Whipping Cream

Step 1:  Cut the 1/4 cup of softened butter into 2 cups if Carbquick in a bowl

Step 2:  Add the 1/2 cup of sour cream, 1/4 cup if diet 7-Up and the 1/4 cup of heavy whipping cream to the bowl and mix (my edit: I sometimes add additional heavy whipping cream if necessary to combine – the dough should be a bit sticky)

Step 3:  In a 6 x 9 baking dish (my edit: I use a square baking dish) add the 1/4 cup melted butter and coat the bottom and sides

Step 4:  Form balls of dough and add to the greased baking dish (my edit: I form six balls) flattening the tops a bit before cooking

Step 5:  Cook on 450 degrees for about 12 minutes or until golden brown

Step 6:  Let cool slightly before serving

Step 7: Enjoy!
