Cooking: Noodless Meatball Lasagna

I had some meatballs in the freezer that I needed to figure out what to do with. I happened to be in the mood for lasagna as well and so this recipe was born. I hope you enjoy it as much as my family does!

Ingredients:

  • Square Baking Dish
  • 8 Meatballs
  • Olive Oil
  • 2 Cups Marinara Sauce
  • 1 Can Diced Tomatoes
  • 2 Tablespoons Diced Garlic
  • 2 Teaspoons Dried Basil
  • 2 Teaspoons Dried Oregano
  • 1 Egg
  • 1 1/2 Cup Whole Milk Ricotta Cheese
  • 1 1/2 Cups Shredded Mozzarella Cheese (1 cup for cheese mixture, 1/2 cup for topping)
  • 3/4 Cup Shredded Parmesan Cheese (1/2 cup for cheese mixture, 1/4 cup for topping)
  • 1/2 Cup Diced or Shredded Provolone Cheese

These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.

Step 1: In a medium sized sauce pan add some olive oil to the bottom of the pan and brown the meatballs on all sides

Step 2: Remove meatballs and set aside for later, add some additional olive oil and saute the garlic until fragrant

Step 3: Add the marinara sauce and diced tomatoes and simmer on low until warmed through

Step 4: Preheat oven to 350 degrees

Step 5: While your oven is preheating and your sauce is warming make your cheese mixture by combining the following ingredients:

  • 2 Teaspoons Dried Basil
  • 2 Teaspoons Dried Oregano
  • 1 Egg
  • 1 1/2 Cup Whole Milk Ricotta Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Shredded Parmesan Cheese
  • 1/2 Cup Diced or Shredded Provolone Cheese

Step 6: Cut the meatballs in half, they shouldn’t be completely cooked through, this is okay they will cook thoroughly in the oven.

Step 7: Place your halved meatballs in the baking dish in rows/columns of four

Step 8: Top the meatballs with your about half of the sauce

Step 9: Top the sauced meatballs with the cheese mixture smoothing it over the meatballs in a flat layer

Step 10: Top with your remaining sauce and sprinkle your reserved 1/2 cup shredded mozzarella cheese and 1/4 cup shredded parmesan cheese

Step 11: Bake for 30 minutes

Step 12: Let sit for 10 minutes before serving and enjoy!
