Cooking: Cuban Sandwich Quesadillas

I had been craving a Cuban Sandwich for some time but obviously it was not an option being on the Keto diet.  My saving grace has been low carb tortillas in place of bread.  You can make essentially anything into a quesadilla, especially sandwiches.  So I went for it.  Luckily during our last Costco trip we had picked up some mojo marinated pork chops so I popped those in the crock-pot and away I went.


  • 1 Cup of Cuban Style Pulled Pork
  • About 6 Slices of Ham
  • 4 Slices of Swiss Cheese
  • 1 Cup Shredded Mozzarella
  • About 4 Pickle Slices (depending on the size and type you are using)
  • Yellow Mustard
  • 2 Tortillas


These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.

Step 1:  Prepare or purchase the Cuban style pulled pork

Step 2:  Layer 2 slices of swiss cheese on one half of the tortilla

Step 3:  Top with 3 slices of ham

Step 4:  Place half of the pulled pork atop of the ham

Step 5:  Add pickle slices and a generous squirt of mustard

Step 6:  Finish by adding 1/2 cup of mozzarella and fold

Step 7:  Fry in your choice of oil or butter

Step 8:  Cut and serve!
