This recipe is delicious! It is the perfect Keto side dish or even main dish! These do tend to be rich so be prepared, I would pair it with something a little mellow to balance the meal out. This recipe has been adapted to our preferences but was inspired by this recipe I found on Pinterest.
Ingredients:
- 1 Fully Cooked Chopped Chicken Breast
- 1/2 Cup of Franks Red Hot Sauce
- 1 Tablespoon of Melted Butter
- 3 Cups of Shredded Colby Jack and Mozzarella
These measurements are purely suggestions and I encourage you to add or take away ingredients to meet your preferences.
Step 1: Combine the melted butter, Franks Red hot sauce, and chopped chicken breast. Put mixture in the oven at 400 degrees for about 10 minutes or until warmed through.
Step 2: On a parchment lined baking sheet, use all but 1/2 cup of the shredded cheese to create six mounds of cheese which will become your “wrappers.”
Step 3: Remove the chicken mixture from the oven and add the reserved 1/2 of shredded cheese and stir, place to the side to cool.
Step 4: Put the baking sheet with the cheese in the oven for about 7 minutes or until the edges are browned. Tip: Watch these carefully.
Step 5: Remove the cheese from the oven and let cool for about 1 minute. Flip the cheese wrappers and fill with the cooled chicken mixture and roll into a “taquito.”
Step 6: Enjoy with your favorite dipping sauce!
